Easy, versatile, hearty, and full of flavor—these Air Fryer Portobello Pizzas are a fun way to make pizza night healthier!

Ingredients

  • 2 large portobello mushrooms
  • 4 tbsp pizza sauce
  • 1/2 cup lite shredded mozzarella
  • 8 slices turkey pepperoni (or pepperoni of choice)
  • 4 tbsp black olive slices
  • 1 tsp OUR Green Zest

Instructions

  1. Preheat your air fryer to 375°F.
  2. Prepare the mushrooms: Spoon out the insides of the portobello mushrooms. Break off the stems and use a spoon to remove the black gills from inside the caps.
  3. Season the mushrooms: Spray both mushrooms with avocado spray or rub with extra virgin olive oil (EVOO). Season the inside of the caps.
  4. Air fry the mushrooms: Place the mushrooms in the air fryer, stem side down, and cook for 2 minutes.
  5. Add sauce and toppings: Flip the mushrooms so the inside is facing up. Divide the pizza sauce between the caps, then add half of the cheese and half of the black olives.
  6. Continue cooking: Air fry for another 2 minutes.
  7. Top with pepperoni and cheese: Add the turkey pepperoni, remaining olives, and top with the rest of the cheese to prevent the toppings from flying off during cooking.
  8. Final cook: Air fry for an additional 8 minutes.
  9. Garnish: Top with dried oregano, basil, or any seasonings of your choice!
