Easy, versatile, hearty, and full of flavor—these Air Fryer Portobello Pizzas are a fun way to make pizza night healthier!
Ingredients
- 2 large portobello mushrooms
- 4 tbsp pizza sauce
- 1/2 cup lite shredded mozzarella
- 8 slices turkey pepperoni (or pepperoni of choice)
- 4 tbsp black olive slices
- 1 tsp OUR Green Zest
Instructions
- Preheat your air fryer to 375°F.
- Prepare the mushrooms: Spoon out the insides of the portobello mushrooms. Break off the stems and use a spoon to remove the black gills from inside the caps.
- Season the mushrooms: Spray both mushrooms with avocado spray or rub with extra virgin olive oil (EVOO). Season the inside of the caps.
- Air fry the mushrooms: Place the mushrooms in the air fryer, stem side down, and cook for 2 minutes.
- Add sauce and toppings: Flip the mushrooms so the inside is facing up. Divide the pizza sauce between the caps, then add half of the cheese and half of the black olives.
- Continue cooking: Air fry for another 2 minutes.
- Top with pepperoni and cheese: Add the turkey pepperoni, remaining olives, and top with the rest of the cheese to prevent the toppings from flying off during cooking.
- Final cook: Air fry for an additional 8 minutes.
- Garnish: Top with dried oregano, basil, or any seasonings of your choice!
