Crockpot Chicken Enchiladas

A Mexican dinner is always easier when you can throw it into the crockpot!

Ingredients

Crockpot Chicken

  • 1 pound chicken breasts
  • Avocado oil spray
  • 1/2 tbsp Taco Knight seasoning
  • Trader Joe’s elote seasoning or seasoning of choice
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1 (14.5 oz) can Rotel tomatoes with green chiles (slightly drained)
  • Zest of one lime
  • Juice of one lime
  • 1/2 cup chopped cilantro

Enchilada Components

  • 8 tortillas of choice
  • 1 can fat-free refried beans
  • 3/4 cup cheese of choice
  • 1 (10 oz) can red enchilada sauce

Optional Toppings

  • Shredded iceberg lettuce
  • Light sour cream or Greek yogurt
  • Cilantro for garnish
  • Lime wedges for garnish

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Lightly spray the chicken with avocado oil spray.
  3. Season the chicken with salt and pepper to taste.
  4. Sprinkle Taco Knight, cumin, and elote seasoning over the chicken.
  5. Drain a little juice from the can of Rotel and pour it over the chicken.
  6. Cover the crockpot and set it to cook for 6 hours if the chicken is frozen, or 4 hours if not frozen.
  7. Once done, shred the chicken to your liking and mix in lime zest and lime juice, along with the chopped cilantro.
  8. Preheat the oven to 375°F (190°C).
  9. In a large casserole dish, pour 1/4 of the enchilada sauce on the bottom.
  10. Spread 2 tablespoons of refried beans on each tortilla.
  11. Place about 2.5 ounces of the chicken mixture on each tortilla, followed by 1 tablespoon of cheese.
  12. Roll up each tortilla and place them in the casserole dish.
  13. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
  14. Cover the casserole dish with foil and bake for 20-30 minutes.
  15. Remove the foil and bake for an additional 15 minutes for a crisper top, or broil for a few minutes if desired.
