BBQ Grilled Chicken Salad

Ingredients

For the BBQ Chicken:

  • 3 1/2 ounces BBQ chicken

BBQ Sauce/Marinade:

  • BBQ sauce of choice
  • OUR BBQueen seasoning

Salad Fixings:

  • 3 cups romaine, chopped
  • 1/4 cup charred corn (fresh or canned)
  • 1/3 cup Pico de Gallo
  • 1/2 cup cucumbers, chopped
  • 1 1/2 slices of cheese of choice
  • 1/4 cup diced red onions
  • 2 tablespoons Bolthouse Farms Honey BBQ yogurt dressing

Instructions

  1. Marinate the Chicken: In a bag or bowl, place the chicken breasts. Season with salt, pepper, and OUR BBQueen seasoning. Add the BBQ sauce and marinate for 1-4 hours (the longer, the more tender the chicken will be).
  2. Preheat the Grill: Prepare the grill at medium-high heat.
  3. Grill the Chicken: Once the grill is hot, place the chicken on it. Cook until the internal temperature reaches 165°F. Flip the chicken halfway through and add more BBQ sauce on top for extra flavor.
  4. Rest the Chicken: Set the grilled chicken aside and let it rest for about 10 minutes before cutting.
  5. Assemble the Salad: In a large bowl, combine the chopped romaine, charred corn, Pico de Gallo, cucumbers, diced red onions, and cheese. Top with sliced BBQ chicken and drizzle with Bolthouse Farms Honey BBQ yogurt dressing.
  6. Serve and Enjoy: Toss the salad gently to combine, and dig in!
