Ingredients
Taco Meat
- 1 pound ground beef (96/4)
- 1 tbsp OUR Taco Knight seasoning
- Salt & pepper to taste
- 1/4 cup beef broth of your choice
- 1/4 cup fresh cilantro, chopped
Add-Ons (per burrito)
- 1/4 cup fat-free refried beans
- 1/3 cup fat-free cheddar cheese
- Shredded lettuce
- Diced tomatoes
- Salsa, guacamole, or hot sauce of choice
Rice
- 1 bag frozen cauliflower rice (10–12 oz), steam-in-bag
- 1/4 cup fresh cilantro, chopped fine
- Zest of one lemon
- Juice of half a lime
- OUR Taco Knight seasoning to taste
- Salt & pepper to taste
Tortilla/Flatbread
- 4 tortillas or flatbreads of choice
Instructions
- Cook the Meat: In a sauté pan, brown the ground beef. Drain if needed, then return to the pan.
- Season the Meat: Add beef broth, OUR Taco Knight seasoning, chopped cilantro, and salt and pepper to taste. Set aside.
- Prepare Cauliflower Rice: Microwave the bag of cauliflower rice according to package instructions, straining any excess water. In a bowl, combine cauliflower rice, chopped cilantro, lime zest, lime juice, OUR Taco Knight seasoning, salt, and pepper to taste.
- Assemble the Burrito: Place a tortilla or flatbread on a clean surface. Smear with refried beans, sprinkle with cheese, then add beef, cauliflower rice, shredded lettuce, and your choice of salsa or dressing.
- Roll It Up: Roll the burrito tightly and enjoy! For an extra crunch, spray the rolled burrito with cooking spray and place it in an air fryer for a few minutes until crispy on the outside.
