Ingredients

  • 2 Cut da Carb Flatbreads
  • 8 oz 96/4% Ground Beef
  • 2 tsp OUR Taco Knight seasoning
  • 1–1/2 cups Lite 3 Cheese Blend Shredded
  • 3/4 cup Roasted Corn
  • 2 Mini Sweet Red Peppers, chopped
  • 2/3 cup Chopped Onion
  • 4 tbsp Lite Sour Cream
  • 4 tbsp Medium Salsa Con Queso
  • I Can’t Believe It’s Not Butter Spray (ICBINB)

Instructions

  1. Caramelize the onions: In a small fry pan, caramelize your chopped onions over high heat. Once they start to brown, add a little water and stir until golden brown.
  2. Cook the beef: In another fry pan, cook the ground beef with OUR Taco Knight seasoning until fully cooked.
  3. Chop the peppers: While the beef and onions cook, chop the mini sweet red peppers.
  4. Warm the salsa: Lightly warm the salsa con queso so it isn’t cold when added to the wrap. Avoid overheating to prevent tearing the flatbread.
  5. Cool the meat: Once cooked, set the ground beef aside to cool.
  6. Warm the corn: Add the roasted corn to the caramelized onions to warm through. If using frozen corn, heat until thawed.
  7. Assemble the flatbread: Lay out your flatbread and layer the middle with ingredients, starting and ending with ½ cup of shredded cheese to help it melt.
  8. Fold the wrap: Fold the flatbread like a present, starting with the bottom, then the left corner, and so on.
  9. Cook the crunchwrap: Spray the folded side with ICBINB and place it in a fry pan over medium-high heat. Cook for a few minutes until golden and crispy.
  10. Flip and finish: Spray the top of the crunchwrap with ICBINB, flip, and cook until the other side is golden. Spray the sides, using a spatula to hold one side up while spraying the other.
  11. Serve: Once golden all around, place on a cutting mat, cut in half, and enjoy!
