Berry Stuffed French Toast

Indulge in a delicious, easy, and HEALTHY breakfast with this Berry Stuffed French Toast! Packed with flavor and nutritious ingredients, this dish is perfect for a delightful morning treat.

Ingredients

For the French Toast

  • 3 slices of low carb bread of choice

For the French Toast Batter

  • 1 whole egg or 1/4 cup egg whites
  • 1/4 cup unsweetened almond milk
  • 1/4 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • Pinch of salt

For the Filling

  • 1/2 cup non-fat Greek yogurt
  • 1 teaspoon Simply Delish vanilla pudding mix
  • 1 tablespoon My Berry Sauce (click HERE for the recipe)

For Garnish

  • 1/3 cup berry sauce
  • 2 tablespoons fat-free Reddi Whip
  • 3 tablespoons sugar-free pancake syrup
  • 1 teaspoon OUR Chocolate Crave

Instructions

  1. In a bowl, combine the ingredients for the French toast batter and set aside.
  2. Place a nonstick pan on the burner over medium heat.
  3. While the pan is heating, combine the filling ingredients in a separate bowl and set aside.
  4. Dunk each slice of bread into the batter one at a time, then place them into the lightly greased pan.
  5. Brown both sides of the bread until golden.
  6. Once cooked, layer each slice of French toast with the yogurt filling.
  7. Garnish with berry sauce, whipped cream, pancake syrup, and a drizzle of OUR Chocolate Crave.
  8. Enjoy your delicious creation!
