Ingredients
For the French Toast
- 3 slices of low carb bread of choice
For the French Toast Batter
- 1 whole egg or 1/4 cup egg whites
- 1/4 cup unsweetened almond milk
- 1/4 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
For the Filling
- 1/2 cup non-fat Greek yogurt
- 1 teaspoon Simply Delish vanilla pudding mix
- 1 tablespoon My Berry Sauce (click HERE for the recipe)
For Garnish
- 1/3 cup berry sauce
- 2 tablespoons fat-free Reddi Whip
- 3 tablespoons sugar-free pancake syrup
- 1 teaspoon OUR Chocolate Crave
Instructions
- In a bowl, combine the ingredients for the French toast batter and set aside.
- Place a nonstick pan on the burner over medium heat.
- While the pan is heating, combine the filling ingredients in a separate bowl and set aside.
- Dunk each slice of bread into the batter one at a time, then place them into the lightly greased pan.
- Brown both sides of the bread until golden.
- Once cooked, layer each slice of French toast with the yogurt filling.
- Garnish with berry sauce, whipped cream, pancake syrup, and a drizzle of OUR Chocolate Crave.
