Description

It’s Fall y’all and it’s time to enjoy all the fall produce for the next couple of months! Delicata squash is a great fall produce that is versatile and fun to cook with. You can make it as fries, stuffed boats, and even mashed, but why not add some Mexican flare to it too?! Delicata squash is also high in fiber and potassium, so eat up and enjoy this delicious squash!

Ingredients

  • 3 cups delicata squash
  • 6 oz blackened chicken
  • 2/3 cup roasted corn
  • 1/4 cup caramelized onions
  • 2 diced sweet mini red peppers
  • 1 tsp OUR Blackened
  • 1/2 tbsp fresh chopped cilantro
  • 2 tbsp medium salsa con queso
  • 2 tbsp light sour cream
  • 1/3 oz cotija cheese

Instructions

  1. Slice the end of your delicata squash, then cut down the middle long ways. Scoop out the seeds, then cut into fry shapes.
  2. Spray or drizzle with EVOO and season with OUR Blackened.
  3. Air Fry at 400°F for 25 minutes. Add the chicken to the air fryer when you have 10 minutes left. Shake squash first.
  4. Caramelize your onions in a fry pan, then add your corn to heat up once the onions are done.
  5. Dice up your red peppers and cilantro.
  6. Once your chicken is cooked, cut it into bite-sized pieces.
  7. Assemble your bowl with all your goodies, drizzle cheese on top, and add sour cream, cilantro, and cotija cheese!
