A pasta dish with Mexican flair that is LOADED with flavor! It’s DELISH!

Ingredients

  • 3/4 cup Al Dente Carba Nada Fusilli Pasta (dry)
  • 2 ears corn on the cob
  • 7 oz Tyson Blackened Chicken
  • 1/8 cup Light Sour Cream
  • 2–2/3 tbsp Light Mayo
  • 1 Lime
  • 1 tbsp Fresh Chopped Cilantro
  • 1/8 cup Diced Red Onion
  • 1 small Mini Sweet Red Pepper
  • 1/8 cup Chopped Green Onions
  • 1 tsp Chili Powder
  • 1/2 tsp OUR Blackened Seasoning
  • 1 tbsp Grated Parmesan
  • 1/3 oz Cotija Cheese

Instructions

  1. Air fry the chicken at 400°F for 10 minutes.
  2. Boil the pasta until done (approximately 10 minutes).
  3. Prepare the corn: Cut off the kernels from the cobs and fry in a pan with Pam and some chili powder. Once some kernels are darker, remove and set aside.
  4. Chop your veggies.
  5. Make the dressing: Mix the sour cream, mayo, and the juice of 1/2 lime, then set aside.
  6. Cut the chicken into bite-sized pieces once cooked.
  7. Combine the ingredients: In a mixing bowl, combine the cooked pasta, chicken, veggies, 1/4 of the parmesan, cotija cheese, corn, and dressing mixture. Stir until well mixed.
  8. Serve: Top with the remaining grated parmesan, additional seasonings, and a drizzle of more sour cream if desired!
