Breakfast Potato Bowl

Ingredients

  • 141 grams Yukon gold potatoes – large cubes (1/2 inch)
  • 1 chicken sausage (or sausage of choice)
  • 3 eggs
  • Dak's Green Zest
  • Black pepper to taste
  • 20 grams fat-free cheddar cheese
  • 20 grams fat-free mozzarella cheese
  • Hot sauce – optional
  • Chives for garnish

Prep Time: 10 minutes
Cook Time: 10 minutes

Instructions

  1. First, take the potatoes and chop them into large cubes (about 1/2 inch).
  2. Place the potatoes into the microwave for two minutes or until tender.
  3. In a medium-heated skillet, spray some avocado oil, then add the potatoes.
  4. Sauté for a few minutes, then cut up the chicken sausage and add it to the same pan as the potatoes.
  5. In the same pan or a new one, cook your eggs to your liking.
  6. Sprinkle the cheeses onto the potatoes and sausage and allow to melt.
  7. Place your cooked eggs on top of the potatoes and sausage.
  8. Enjoy!
