Breakfast Potato Bowl
Ingredients
- 141 grams Yukon gold potatoes – large cubes (1/2 inch)
- 1 chicken sausage (or sausage of choice)
- 3 eggs
- Dak's Green Zest
- Black pepper to taste
- 20 grams fat-free cheddar cheese
- 20 grams fat-free mozzarella cheese
- Hot sauce – optional
- Chives for garnish

Cook Time: 10 minutes
Instructions
- First, take the potatoes and chop them into large cubes (about 1/2 inch).
- Place the potatoes into the microwave for two minutes or until tender.
- In a medium-heated skillet, spray some avocado oil, then add the potatoes.
- Sauté for a few minutes, then cut up the chicken sausage and add it to the same pan as the potatoes.
- In the same pan or a new one, cook your eggs to your liking.
- Sprinkle the cheeses onto the potatoes and sausage and allow to melt.
- Place your cooked eggs on top of the potatoes and sausage.
