Ingredients

Cheesy Gordita Crunch

  • 16 oz My Bizzy Kitchen Skinny Pizza Dough
  • Avocado oil spray
Beef
  • 1 pound lean 96/4 ground beef
  • 1 tablespoon OUR Taco Knight seasoning
  • Salt & pepper to taste
Fixings
  • 8 corn tortillas
  • 2 cups fat-free cheddar cheese
  • 4 tablespoons Baja Sauce (see below)
  • 2 cups shredded lettuce
  • 1/4 cup taco sauce (optional)

Baja Sauce

  • 1/3 cup roasted red peppers (in water), drained
  • 2 tablespoons onions, minced and drained
  • 1/2 cup light mayonnaise
  • 1/4 cup light sour cream
  • 1/2 cup non-fat Greek yogurt
  • 1/2 teaspoon ground cumin
  • 1/2 tablespoon Hidden Valley Ranch Seasoning
  • 1 teaspoon OUR Nothin’ But Ranch seasoning
  • 1/2 teaspoon garlic salt
  • 2 teaspoons sugar
  • 2 teaspoons white vinegar
  • 1/4 teaspoon black pepper

Instructions

Cheesy Gordita Crunch

  1. Cook the ground beef in a skillet, seasoning it with OUR Taco Knight, salt, and pepper to taste. Set aside.
  2. Prepare the skinny pizza dough by dividing it into 2 oz. balls (8 portions total).
  3. Heat a cast iron skillet with a light coating of avocado oil. Roll out each dough ball into a circle.
  4. Cook each dough round in the skillet until lightly browned on both sides but still soft. Remove and set aside.
  5. On each flatbread, sprinkle 1/4 cup of fat-free cheese, then place a corn tortilla on top. Wrap in foil and warm in the oven to melt the cheese.
  6. Once melted, fill each gordita with 2 oz. of taco meat, Baja sauce, taco sauce, and shredded lettuce.

Baja Sauce

  1. In a food processor, blend the minced onion and roasted red peppers until finely chopped. Pour the mixture into a strainer to remove excess liquid.
  2. In a separate bowl, combine all other sauce ingredients, then add the pepper and onion mixture. Mix well and enjoy!
