Ingredients
For the Salad:
- 4 ounces chicken breast or rotisserie chicken
- Nothin’ But Ranch seasoning
- Salt & pepper to taste
- 3 cups chopped Romaine lettuce
- 1/2 cup chopped cucumbers
- 1/4 cup chopped red onions
- 2 tablespoons grated Parmesan cheese
- 28 Good Thins sea salt and rice snacks (for crunch)
For the Dressing:
- 2 tablespoons non-fat Greek yogurt
- 2 tablespoons Bolthouse Farms Caesar Pramigiano yogurt dressing
- Black pepper to taste
For the Cheese Bread:
- 2 slices Royo Bread or bread of choice
- Spray butter
- 1/4 teaspoon garlic salt
- 20 grams fat-free mozzarella cheese
Instructions
- Prepare the Chicken: Cook the chicken breast according to your preference (grilled, baked, or rotisserie). Ensure it is fully cooked before assembling the salad.
- Chop Ingredients: Chop the cooked chicken, Romaine lettuce, cucumbers, and red onions into bite-sized pieces.
- Combine Salad: Place the chopped ingredients into a large zip bag or Tupperware container. Add the grated Parmesan cheese.
- Make the Dressing: In a small bowl, mix the Greek yogurt, Caesar dressing, and black pepper. Pour this mixture into the bag or container with the salad ingredients.
- Add Crunch: Crush half of the Good Thins and add them to the bag. Shake the bag or container until everything is evenly coated.
- Serve: Pour the salad into a bowl, top with the remaining crushed Good Thins, and add the cheesy bread.
For the Cheese Bread:
- Prepare Bread: Spray the bread slices with butter, then sprinkle with garlic salt and top with mozzarella cheese.
- Bake: Place in an oven at 350°F (175°C) or an air fryer at 350°F (175°C) until the cheese is melted and bubbly.
