Get ready to indulge in these Everything Bagel Crispy Quinoa Chicken Bites! A perfect blend of flavors and textures, they make for a delicious appetizer or a delightful dinner option.
Ingredients
- 1 tsp OUR Everything But Tha’ Salt seasoning
- 2 bags of quinoa, cooked according to package instructions
- 2 pounds boneless, skinless chicken breasts, sliced into 2-inch pieces
- 2/3–3/4 cup avocado oil or olive oil of choice (start with 2/3 cup and add more if needed)
- 1/2 tsp kosher or sea salt
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and line a large rimmed sheet pan with parchment paper.
- Prepare Oil: Pour avocado oil into a small bowl.
- Mix Quinoa: In a medium bowl, combine cooked quinoa with OUR Everything But Tha’ Salt and kosher salt.
- Coat Chicken: Dip each piece of chicken into the avocado oil, letting any excess oil drip back into the bowl. Then, coat the chicken in the quinoa mixture, pressing gently to adhere.
- Bake: Arrange the coated chicken pieces on the prepared sheet pan, ensuring they can be close together. Bake for 20 minutes, then flip the chicken pieces and bake for an additional 10-15 minutes until golden and crispy.
- Serve: These bites can be served as an appetizer or paired with roasted veggies or a side salad for a wholesome dinner!
