Feta Fried Eggs
Ingredients
- 2 Joseph’s Flax, Oat Bran, and Whole Wheat Pitas
- 30 g avocado
- 90 g fat-free feta cheese
- 2 eggs
- 1/2 cup pico de gallo
- Fresh chives
- Dak's Super Greek
Prep Time: 5 minutes
Cook Time: 10 minutes
Instructions
- In a medium heated non-stick frying pan, spray a light layer of avocado oil.
- Lightly toast the pita breads and set aside.
- In the same pan, lower the heat to low and spray some avocado oil.
- Add the feta cheese into the pan.
- Crack the eggs right into the feta cheese.
- Season with Dak's Super Greek.
- Cover the eggs with a lid to help them cook.
- Once the eggs are cooked to your liking and the cheese is brown and crispy, turn off the heat.
- Spread the avocado onto both pita breads, followed by the feta fried eggs.
- Garnish with pico de gallo and fresh chopped chives.
