Feta Fried Eggs

Ingredients

  • 2 Joseph’s Flax, Oat Bran, and Whole Wheat Pitas
  • 30 g avocado
  • 90 g fat-free feta cheese
  • 2 eggs
  • 1/2 cup pico de gallo
  • Fresh chives
  • Dak's Super Greek

Prep Time: 5 minutes
Cook Time: 10 minutes

Instructions

  1. In a medium heated non-stick frying pan, spray a light layer of avocado oil.
  2. Lightly toast the pita breads and set aside.
  3. In the same pan, lower the heat to low and spray some avocado oil.
  4. Add the feta cheese into the pan.
  5. Crack the eggs right into the feta cheese.
  6. Season with Dak's Super Greek.
  7. Cover the eggs with a lid to help them cook.
  8. Once the eggs are cooked to your liking and the cheese is brown and crispy, turn off the heat.
  9. Spread the avocado onto both pita breads, followed by the feta fried eggs.
  10. Garnish with pico de gallo and fresh chopped chives.
