Lightened Up Tuna Melt

Ingredients

  • 4 slices Eat Royo Artisan Bread
  • 2 tablespoons light mayonnaise
  • 2 teaspoons garlic powder
  • 2 slices Borden fat-free American cheese singles

Tuna Mixture

  • 1 can Wild Planet albacore tuna in water
  • 1 tablespoon Bolthouse Farms Classic Ranch Dressing & Dip
  • 1–2 tablespoons nonfat Greek yogurt
  • 1/2 tablespoon mustard of choice
  • Splash of lemon juice
  • 1/4 cup fresh chives, chopped
  • 1 teaspoon OUR Nothin' But Ranch seasoning
  • Black pepper, to taste
  • Salt, to taste (optional)

Instructions

  1. Prepare the Tuna Mixture: In a bowl, combine all ingredients for the tuna mixture. Mix well and set aside.
  2. Prepare the Bread: Spread 1/2 tablespoon of light mayonnaise on one side of each slice of bread, then sprinkle garlic powder on top.
  3. Cook the Sandwich: Heat a low-heat pan and place the bread, mayonnaise side down, onto the pan.
  4. Assemble the Sandwich: Divide the tuna mixture into two portions. Place one portion on the bread in the pan, add a slice of cheese, and top with another slice of bread (mayonnaise side up).
  5. Brown and Serve: Cook until golden brown on both sides, then remove from heat and enjoy!
