Spice up your meal with this Mexican Cauliflower Rice, a nutritious and flavorful alternative to traditional rice. Packed with protein from skinless chicken breast, shrimp, and flank steak, this dish is not only healthy but also jam-packed with vibrant vegetables like broccoli and jalapeños. Finished with a kick of heat from Melinda Foods fire roasted habanero hot sauce, this recipe is perfect for a hearty taco salad or as a stand-alone dish. Ingredients

  • Skinless boneless chicken breast
  • Shrimp
  • Flank steak
  • Broccoli
  • Jalapeños
  • Taco Knight seasoning
  • Natures Intent Foods cauliflower rice (3 bags)
  • 1 can of Rotel Tomatoes
  • Melinda Foods fire roasted habanero hot sauce (or any hot sauce)

Instructions

  1. Prepare Protein: Cube the flank steak and chicken breasts. Coat them with oil and season generously with Taco Knight seasoning.
  2. Air Fry: Preheat your air fryer to 400°F (200°C) and cook the seasoned chicken and steak for 10 minutes. After 10 minutes, add the shrimp to the fryer.
  3. Cook Cauliflower Rice: In a pan, combine 3 bags of Natures Intent Foods cauliflower rice, 1 can of Rotel Tomatoes, broccoli, and jalapeños. Cook until everything is heated through.
  4. Plate: Serve the protein over the cauliflower rice mixture and drizzle with Melinda Foods fire roasted habanero hot sauce for an extra kick.
