Ingredients

For the Chicken:

  • 2 chicken breasts, pounded thin (about 1/2 inch thick)

For the Breading:

  • 1/4 cup Italian bread crumbs
  • 1/2 cup panko bread crumbs
  • 1 tablespoon Original Red
  • 2 tablespoons kosher salt

For the Egg Wash:

  • 2 large eggs
  • 1 teaspoon Original Red
  • 1/4 cup milk of choice

Instructions

  2. In another bowl, whisk together the eggs, Original Red, and milk for the egg wash.
  3. Heat a cast iron skillet over medium heat and add enough oil to just cover the bottom of the pan.
  4. Season both sides of the chicken with salt and pepper. Dredge each piece in the egg mixture, then coat lightly with the breadcrumb mixture.
