Peanut Butter Brownie Baked Oatmeal Bowl

Peanut butter and chocolate for breakfast?! YES PLEASE! This Peanut Butter Brownie Baked Oatmeal Bowl is a delicious and nutritious way to start your day, combining the rich flavors of brownies with the wholesome goodness of oats.

Ingredients

  • 1/2 cup Unsweetened almond milk
  • 1/2 cup Quick cook oats
  • 1/2 cup Frozen cauliflower rice
  • 1 Banana
  • 1 scoop Brownie batter protein powder or chocolate protein powder
  • 1/2 teaspoon Baking powder
  • 1 tablespoon Cocoa powder
  • 1 teaspoon OUR Chocolate Crave
  • 1/2 teaspoon Vanilla extract
  • Pinch of salt
  • 2 tablespoons Peanut butter powder
  • 1 tablespoon Coconut sugar
  • Cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a blender, combine the unsweetened almond milk, oats, cauliflower rice, vanilla, protein powder, OUR Chocolate Crave, salt, banana, and baking powder until smooth.
  3. Spray an oven-safe dish with cooking spray.
  4. Pour the batter into the prepared dish.
  5. In a small bowl, mix the peanut butter powder with water until you achieve a thick consistency. Place half of this mixture into the center of the batter.
  6. Sprinkle the coconut sugar over the top of the batter.
  7. Bake in the preheated oven for 20-25 minutes.
  8. While the oatmeal is baking, thin the remaining peanut butter mixture with additional water until it reaches a drizzle-able texture.
  9. Once the baked oatmeal is done, drizzle the remaining peanut butter on top and enjoy!
  10. Optionally, add some pancake syrup or more unsweetened almond milk for garnish.
