Pumpkin Banana Muffins

Description

These Pumpkin Banana Muffins are a delightful blend of flavors and textures, making them the perfect snack or breakfast option. With the natural sweetness of overripe bananas and the warm spices of pumpkin, these muffins are not only nutritious but also incredibly easy to make. Ideal for meal prep, they are sure to become a family favorite!


Ingredients

Wet Ingredients:

  • 3 – 4 Overripe bananas
  • 1 (15 oz.) Pumpkin puree (not pumpkin pie filling)
  • 1/4 c Unsweetened apple sauce
  • 3 Eggs
  • Splash Vanilla extract

Dry Ingredients:

  • 2 c Flour
  • 1/2 c Sugar
  • 2 tsp Cinnamon
  • 2 tsp OUR Pumpkin Spice
  • 1/2 tsp Nutmeg
  • 2 tsp Baking soda
  • 1/4 tsp Baking powder
  • 1/2 tsp Salt

Instructions

  1. In a large bowl, combine all of the wet ingredients.
  2. Gradually add the dry ingredients and mix until fully combined.
  3. Using a standard muffin scoop (about 1/4 cup), portion the batter into well-greased muffin pans (18 portions).
  4. Bake in a preheated oven at 350°F (175°C) for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  5. As soon as the muffins come out of the oven, spray the tops lightly with spray butter.
  6. Sprinkle a small amount of sugar mixture evenly over the tops of the muffins.
  7. Allow to cool for about 10 minutes before removing them from the pan.
