Ingredients

For the Chicken:

  • 2 boneless skinless chicken breasts
  • OUR Nothin’ But Ranch seasoning
  • Coconut oil for coating

Salad Ingredients:

  • 1 head of broccoli, chopped
  • 1/2 head of cauliflower, chopped
  • 2 scallions, sliced
  • Cherry tomatoes, halved
  • Any other veggies from your crisper drawer (e.g., lettuce, broccoli sprouts)

For the Ranch Salad Dressing:

  • OUR Nothin’ But Ranch seasoning (to taste)
  • Mayonnaise of choice
  • Squeeze of lemon

Instructions

  1. Prepare the Chicken: Coat the chicken breasts with coconut oil and sprinkle with OUR Nothin’ But Ranch seasoning.
  2. Cook the Chicken: Place the chicken in an air fryer and cook at 360°F for 20 minutes or until fully cooked.
  3. Mix the Salad: While the chicken is cooking, combine all the salad ingredients in a large bowl.
  4. Make the Dressing: In a small bowl, mix OUR Nothin’ But Ranch, mayonnaise, and a squeeze of lemon to taste.
  5. Combine Everything: Once the chicken is cooked, dice it into bite-sized pieces and add it to the salad. Pour the ranch dressing over the top and mix well.
  6. Serve and Enjoy!
