Description

Experience a burst of flavors with this Salmon Pineapple Sheet Pan Dinner! Easy, healthy, and delicious, this meal comes together in just 30 minutes, making it a perfect choice for busy weeknights. With vibrant veggies and a hint of sweetness from the pineapple, this dish is sure to please everyone at the table.

Ingredients

  • Salmon fillet
  • Pineapple chunks
  • 1 bag broccoli stir-fry veggies
  • 1-2 tablespoons OUR Asian Zing seasoning
  • Cooked brown rice
  • Sweet bourbon glaze (or teriyaki)

Instructions

  1. Cook the brown rice according to package directions.
  2. Preheat your oven to 425°F (220°C).
  3. Place the salmon (pat dry) skin-side down on a foil-lined baking sheet.
  4. Drizzle 1/2 tablespoon of glaze on each piece of salmon.
  5. Spray the foil around the salmon, then add the broccoli stir-fry veggies and pineapple chunks. Sprinkle everything with OUR Asian Zing seasoning.
  6. Bake in the oven for 18 minutes.
  7. After baking, add another 1/2 tablespoon of glaze to each piece of salmon (2 tablespoons total for 1 serving).
  8. Serve with the cooked brown rice and ENJOY!
