Ingredients
- 1 can drained Bumble Bee Foods tuna
- 2 tablespoons Bolthouse Farms ranch dressing
- 1–2 tablespoons non-fat Greek yogurt
- 1 teaspoon OUR Nothin’ But Ranch seasoning
- Black pepper & garlic powder, to taste
- 3 cups mixed greens and arugula
- Mini cucumbers, sliced
- Cherry tomatoes, halved
- Red onions, diced
- Pickles, chopped
- 15 Good Thins jalapeno lime corn & rice snacks
- Skinny Girl Poppyseed dressing, for topping
Instructions
- Prepare the Tuna Salad: In a bowl, mix the drained tuna with Bolthouse Farms ranch dressing, Greek yogurt, OUR Nothin’ But Ranch seasoning, black pepper, and garlic powder until well combined.
- Chop the Veggies: Dice the mini cucumbers, cherry tomatoes, red onions, and pickles.
- Assemble the Salad: In a large bowl, combine the mixed greens and arugula with the chopped vegetables. Top with the tuna salad and drizzle with Skinny Girl Poppyseed dressing.
- Serve & Enjoy: Add the Good Thins jalapeno lime snacks on the side for an extra crunch!
