Ingredients

  • 4 chicken breasts
  • 1 tsp avocado oil spray
  • Salt & pepper to taste
  • 1 packet Hidden Valley Ranch mix
  • 1 tbsp Nothin’ But Ranch
  • 1/2 cup hot sauce
  • 1/2 cup bone broth
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 14.5 oz Tuttoroso canned no salt added diced tomatoes (undrained)
  • 1/2 cup Bolthouse Farms chunky blue cheese yogurt dressing
  • 1/2 cup Philadelphia whipped cream cheese
  • 1 cup Kraft fat-free cheddar cheese
  • 1 cup Kraft fat-free mozzarella cheese
  • Scallions (for garnish)
  • 1 box Ronzoni penne pasta

Instructions

  1. Prep the Crockpot: Place the chicken breasts in the crockpot, breast side down.
  2. Season: Spray lightly with avocado oil and season with salt, pepper, and both ranch seasonings.
  3. Add Sauces: Pour the hot sauce over the chicken, followed by the bone broth at the bottom of the crockpot.
  4. Add Veggies: Layer in the diced celery, onion, and undrained diced tomatoes.
  5. Dress It Up: Pour the blue cheese dressing over the top and set the crockpot to low for 6-8 hours.
  6. Shred the Chicken: Once the chicken is fully cooked, shred it to your liking.
  7. Cook the Pasta: Cook the Ronzoni penne according to package instructions, then add it to the shredded chicken.
  8. Mix in Cheese: Fold in the fat-free cheddar and mozzarella cheeses, covering on low for 15 minutes until melted.
  9. Serve: Garnish with additional hot sauce and chopped scallions. Enjoy!
