Ingredients
- 2 cups fresh chopped spinach
- 1/2 cup ricotta cheese
- Black pepper (to taste)
- Garlic powder (to taste)
- 3 chicken breasts
- Blackened spice seasoning
Instructions
- Place the chicken breasts in a freezer bag and pound them flat with a rolling pin.
- In a bowl, mix the ricotta cheese, chopped spinach, black pepper, and garlic powder until well combined.
- Spray or butter a baking dish to prevent sticking.
- Place 1/3 of the cheese mixture on each flattened chicken breast and fold them over.
- Line the stuffed chicken breasts in the prepared baking dish.
- Sprinkle the blackened spice blend generously over the top of each chicken breast.
- Bake at 350°F (175°C) for 30-35 minutes, depending on the size of your chicken breasts, until fully cooked.
