This easy-to-make recipe combines tender chicken breasts filled with creamy ricotta and fresh spinach, all enhanced by a flavorful blackened spice blend. It’s a guaranteed "winner-winner chicken dinner" that will impress your family and friends!


Ingredients

  • 2 cups fresh chopped spinach
  • 1/2 cup ricotta cheese
  • Black pepper (to taste)
  • Garlic powder (to taste)
  • 3 chicken breasts
  • Blackened spice seasoning

Instructions

  1. Place the chicken breasts in a freezer bag and pound them flat with a rolling pin.
  2. In a bowl, mix the ricotta cheese, chopped spinach, black pepper, and garlic powder until well combined.
  3. Spray or butter a baking dish to prevent sticking.
  4. Place 1/3 of the cheese mixture on each flattened chicken breast and fold them over.
  5. Line the stuffed chicken breasts in the prepared baking dish.
  6. Sprinkle the blackened spice blend generously over the top of each chicken breast.
  7. Bake at 350°F (175°C) for 30-35 minutes, depending on the size of your chicken breasts, until fully cooked.
