You can never go wrong with a healthy steak and potato bowl!!!
Ingredients
For the Bowl
- 4 oz lean T-bone steak (fat trimmed)
- 3/4 large sweet potato
- 1/8 avocado
- 1 tsp OUR BBQueen seasoning
- 2 tsp extra virgin olive oil (EVOO)
For the Avocado Crema
- 1/2 Wholly Guacamole 100-calorie pack
- 1/2 squeeze of lime
- 1/8 tbsp sugar-free honey
- 2 tbsp 0% plain Greek yogurt
Instructions
- Prepare the steak: Season the steak with OUR BBQueen seasoning and sous vide at 137°F for 2 hours (or cook using your preferred method).
- Prepare the sweet potato: Wash and dice the sweet potato, drizzle with EVOO, and season with OUR BBQueen.
- Cook the sweet potato: Air fry the sweet potatoes at 400°F for 2 minutes.
- Slice the avocado: Cut your avocado into slices and set aside.
- Heat the corn: Heat the roasted corn in a fry pan (or your preferred method).
- Make the avocado crema: Whisk together the crema ingredients: Wholly Guacamole, lime juice, sugar-free honey, and Greek yogurt.
- Slice the steak: Once the steak is done cooking, slice it up.
- Assemble the bowl: Add the steak, sweet potatoes, corn, and avocado to a bowl, then drizzle the avocado crema on top!
