Elevate your mealtime with this easy, delicious, and healthy Steak Burrito Bowl! Packed with flavor and versatility, it’s the perfect dish for any occasion.

Ingredients

  • 1 tsp OUR Taco Knight seasoning
  • 2 tbsp Daisy light sour cream
  • 20 Good Thins “The Corn One” sea salt & corn rice snacks
  • 1 cup frozen riced cauliflower
  • 1/3 cup pico de gallo
  • 2 diced sweet mini baby bell peppers
  • 2/3 cup roasted corn
  • 6 ounces flat iron steak

Instructions

  1. Grill the Steak: Grill the flat iron steak to your desired doneness, then divide it into two portions.
  2. Prepare Cauliflower Rice: In a pan, sauté the frozen riced cauliflower with OUR Taco Knight seasoning and the roasted corn until heated through.
  3. Assemble the Bowl: In each bowl, layer the riced cauliflower mixture, pico de gallo, diced sweet mini peppers, and top with a portion of the grilled steak.
  4. Serve: Add a dollop of Daisy light sour cream and serve with Good Thins corn snacks on the side for a delightful crunch!
