Description
Make your Sundays special with this Sunday Roast recipe! Perfectly seasoned and slow-cooked, this hearty meal is an ideal way to bring family together for a comforting supper. Packed with tender meat and flavorful vegetables, it's the ultimate cozy dish that lets you relax and enjoy your weekend.
Ingredients
- 3 lbs roast tied with kitchen twine
- 3 tbsp butter
- 1 lb potatoes (cut into chunks; baby red potatoes work well)
- 4 carrots (peeled and cut into chunks)
- 1 onion (cut into chunks)
- 2 celery sticks (cut into chunks)
- 1/2 lb mushrooms (quartered)
- 4 garlic cloves (minced)
- 1 tbsp Italian Blast seasoning
- 1 1/2 tsp salt
- 1 tsp pepper
- 1/2 tsp dry mustard
- 1 tbsp dried parsley
- Fresh herb sprigs (rosemary, thyme, sage, & oregano)
- 1 bay leaf
- 3 cups beef broth
- 1 cup red wine
- A few dashes of Worcestershire sauce
- 1/2 cup water
Instructions
- Prepare Vegetables: Cut all your vegetables into large chunks.
- Season the Roast: Sprinkle the roast with salt and pepper.
- Sear the Beef: Place the crock pot insert on the stove over high heat. Add 1 tbsp of oil and sear the beef on all sides. Set the beef aside.
- Sauté Vegetables: Add butter to the pan and sauté the veggies for about 5 minutes. Then add the garlic, Italian Blast seasoning, and fresh herbs.
- Combine Ingredients: Return the roast to the pan and place the insert into the crockpot. Pour in the beef broth, red wine, water, and Worcestershire sauce.
- Cook: Cover and cook on low for 8 hours or on high for 4 hours.
- Serve: Remove the roast from the pan, cut off the twine, and pull the beef apart. Serve with the sautéed veggies and pour the flavorful broth on top.
