Turkey Pepperoni Egg Bites

Egg bites with a pizza twist! These Turkey Pepperoni Egg Bites are a delicious and healthy option for breakfast or a snack. Packed with protein and flavor, they are easy to make and perfect for meal prep.

Ingredients

Egg Base

  • 5 Whole eggs
  • 1/2 cup cottage cheese
  • 1/2 cup unsweetened almond milk
  • 1/2 teaspoon OUR Green Zest
  • 1 teaspoon OUR Italian Blast
  • Pepper to taste

Filling

  • 18 slices turkey pepperoni

Toppings

  • 1/4 cup fat-free cheddar cheese
  • 1/4 cup fat-free mozzarella cheese

Instructions

  1. In a blender or food processor, combine all the egg batter ingredients until smooth.
  2. Spray the egg mold with cooking spray to prevent sticking.
  3. Add the chopped turkey pepperoni to the bottom of the molds.
  4. Pour the egg batter into the molds, filling them about 3/4 full.
  5. Sprinkle the cheese on top of the egg batter.
  6. Cover the egg mold with foil.
  7. Place the egg mold onto the trivet in your Instant Pot.
  8. Pour 1-2 cups of water into the bottom of the Instant Pot and close the lid.
  9. Set the Instant Pot to steam for 8 minutes.
  10. Once done, allow for a natural release for 10 minutes.
  11. Remove the lid and enjoy your Turkey Pepperoni Egg Bites!
