Veggie Breakfast Bowl

A hearty, healthy, and delicious breakfast bowl that will keep you full for hours! Packed with vibrant veggies and protein, this dish is perfect for starting your day off right.


Ingredients

  • 1/3 cup onions (chopped)
  • 1 cup broccoli (chopped)
  • 1 cup cauliflower rice
  • Nothin But Ranch seasoning
  • Everything But Tha’ Salt seasoning
  • Salt & pepper (to taste)
  • 3 eggs (seasoned with the same seasonings as the “rice”)
  • 2 Morning Star Farms veggie sausage patties
  • 1/2 cup Good Culture cottage cheese (blended)
  • Sriracha (to garnish, optional)

Instructions

  1. Sauté the onions, broccoli, and cauliflower rice in a pan, seasoning with Nothin But Ranch, Everything But Tha’ Salt, salt, and pepper.
  2. In a separate pan, cook the sausage patties and eggs using the same spices as the veggies.
  3. Blend the cottage cheese in a blender or food processor until smooth.
  4. Plate everything together and enjoy your delicious veggie breakfast bowl!

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes
